Chinese Eggplants

The skin is thinner and less tough than regular eggplants, and have fewer seeds.


Choose an eggplant that is heavy for its size with firm, glossy skin. Give a firm yank and it will come off the vine or use a knife or shears to clip them.


Refrigerate in plastic bag for up to 1 week.
