Choose cans that are in good condition- no rusting, bulging or severe dents on the seam.
Store cans in a cool dry place, away from temperature extremes-not above the stove or in the garage. Use within 18 months to 5 years or until the date on the can. Once opened, refrigerate any unused portion in a different container.
Check the label. Vegetables are canned within hours of being picked and nutrients are well preserved away from air or light. Canned vegetables provide significant nutrients that are close at hand and ready to eat.
