Brussels Sprouts

Slow to mature and expensive to buy.

Selection

Choose firm, compact, bright green Brussels sprouts heads. 1 to 1.5 inches in diameter. Twist or snap off the buds, or cut them with a knife at the base. Pick before they turn yellow, or they will be bitter.

Buy on the Stalk when possible.

As you harvest, continue removing the leaves below the sprouts you pick.

Storage

Refrigerate brussels sprouts in plastic bag up to 1 week.
